An individual that promotes the consumption of offal - the entrails and internal organs of a butchered animal. As in "I'm pro-offal. Can you tell me where I might find rolled pig's spleen in Albuquerque?" The pro-offal worship Fergus Henderson, author of the 2004 cookbook The Whole Beast: Nose to Tail Eating.
